Chicken-Jicama Slaw

3 cups cooked chicken, diced (rotisserie chicken works well)

2 cups broccoli slaw or shredded green cabbage

½ cup cucumber, diced

½ small red onion, finely diced

1 cup diced jicama

½ cup Paleo Mayo (recipe at www.everydaypaleo.com)

1 tablespoon balsamic vinegar

1 teaspoon paprika

½ teaspoon chili powder

Pinch cayenne pepper

Place all the ingredients in a large bowl, mix, and enjoy!

Yield: 4 servings.
